Title: Orange Fennel and Olive Salad

Peel the oranges removing all the pith and slice finely. Put into a salad bowl. Clean the fennel and remove the tougher outer leaves and the hard core.
Slice finely and add to the bowl. Add the olives and the oil. Slice the celery heart and add. Season with salt and pepper and toss the salad. Leave the salad in a cool place to acquire flavour before serving
Can use oil cured olives
